Actually, there is a shortcut for converting the text to outlines while replacing the original text at the same time: just hold down the Option/Alt key when choosing Style> Text to Box. That way, you don't have to go back and delete the text.
Also, it's an easy way to convert a character, word, or headline into outlines and still let them flow with the text (should it reflow later). Try dropping a picture into the outlined character. Have some fun...
